if most of the nutrient is found on the skin of potatoes, then i am devastated because (like most of us) that is exactly what i take off religiously. what is the option here? is it safe to have potatoes with skin on with simple washing? are potatoes skins prone to pesticide content? thanks, Suparna
[edit] nutrients in potato skin
While the skin does contain approximately half of the total dietary fiber, the majority (more than 50%) of the nutrients are found within the potato itself. The cooking method used can significantly impact the nutrient availability of the potato. -- wikipedia
