Soybean has found a calling higher than tofu and tamari sauce. It's being used to insulate equipment bringing electricity to millions of homes.
More than 100 utilities in the US are using soy-based oil as a safer, eco-friendly alternative to petroleum coolants in electrical transformers, which convert high-voltage power from a plant to a lower voltage for consumers.

I love Miso, it adds flavour, depth and apparently incremental amounts of soy isoflavones to foods. It is a staple in Japanese cooking and made with soybeans, and various grains like rice, barley cooked and then cooled, then inoculated with friendly mould and allowed to culture. It ranges in colour from pale yellow to darl rich brown and in flavour from sweet to salty. The lighter ones are sweeter, fruity and more subtle while the dark ones are quite robust. Since it keeps well in the fridge dont stress if it forms a mouldy layer on the surface, just scrape it off. It's perfectly safe to eat. By the way it's also quite high in sodium so use it sparingly as a salt alternative and avoid using additional salt when making a dish with miso.It's gorgeous in vinaigrettes and marinades or just for a simple stock.
