Vegetables contain a whole range of vitamins , anti-oxidants , minerals and many other protective ingredients, and are also low in calories. Dark green and orange vegetables like carrots, winter squash, spinach, broccoli, sweet potatoes etc contain beta-carotene, which the body converts to vitamins. Food made out of such vegetables help prevent cancer.
